Veggie Pasta with Petar Stantchev

Ingredients:

  • Rigatoni or whatever noodle you prefer
  • Salt
  • Pepper
  • Red pepper flakes
  • Onion
  • Zucchini
  • Eggs
  • Grana Padano cheese (similar to Parmesan but more mild)
  • Olive oil

Directions:

  • Dice your onion and zucchini into small pieces.
  • Add oil and diced onions to a medium/high heat pan.
  • Cook down the onions and then add in the chopped zucchini.
  • While your onions and zucchini cook down, grate your Grana Padano cheese.
  • Once the onions and zucchinis have cooked down and are translucent go ahead and add in 1 tablespoon of red pepper flakes and a few pinches of pepper, then stir – bring down heat to a simmer and cover with a lid.
  • Add water and a pinch of salt to a separate pot and bring to a boil.
  • While your water is coming to a boil take a mixing bowl and add in your eggs, your grated cheese and a few more pinches of pepper – whisk everything together, set aside (this recipe uses 4 eggs but you can use less or more depending on how much you like eggs).
  • Once you’ve cooked your pasta, strain and combine with your pan of veggies – stir well to combine.
  • Once its mixed well, take your bowl of eggs, cheese, and pepper and mix it in slowly – making sure the pan isn’t too hot so the egg doesn’t immediately cook through and binds with your pasta and veggies.
  • Take your favorite bowl and fill it with your delicious pasta alla Grana Padano e zucchini and enjoy!
