Roasted Veggie & Black Bean Burrito with Max Murphy

Ingredients:
Broccoli
Orange bell pepper
Yellow onion
Purple sweet potatoes
Carrots
Can of black beans
Avocado
Corn or flour tortillas
Seasoning mix: Cumin / paprika / onion powder / black pepper / salt / cayenne / garlic powder
No real measurements on the spices or anything, just free flow to taste, or buy a taco seasoning packet to keep it simple!

Directions:
Preheat oven to 450 degrees
Cut up your vegetables to equal sizes
In your pan or bowl toss veggies in olive oil with seasoning
Spread out on baking sheet and bake for 20-30 minutes
Open up a can of black beans and add them to a saucepan on low to heat while the veggies cook
Once your vegetables are done, take your favorite tortilla, add a layer of black beans, top with avocado, then roll that puppy up.
(I like to throw my burrito back in the oven for a couple mins to crisp up the tortilla)
Top with your favorite salsa or hot sauce and enjoy.
